The Best DIY Grain-free Baking Mix

If you’re low carb, primal, paleo, or ketogenic, you’ve no doubt had to come up with an alternative to flour.  That is, if you still want to eat things like biscuits, sandwiches, pizza, muffins, etc.  There are dozens of recipes for mixes out there.  You can even buy some low-carb blends….which I’ve tried…..and although they’re acceptable (in a pinch), they really aren’t my cup of tea.  It took me almost three years to come up with my favorite mix.  I keep a large batch of it in the refrigerator at all times!  You just never know when a hankering for a cheese biscuit or a mini-chocolate cake will hit!  I do make a lot of minute muffins, but I also like pound cake, brownies, pizza, and an occasional loaf of bread.  This flour mix works for almost every recipe I make.  So here’s what you’ll need for Shari's All Purpose Baking Mix:

3 cups Almond Flour

2 cups Hazelnut Flour

½ cup Coconut Flour

½ cup Golden Flax meal

2 tsps Salt

2 Tbls Baking Powder

You can mix it all in a food processor or by hand.  Store it in an air-tight container in your refrigerator and that’s it!  Ready to go!  You can also easily double or even triple the recipe.

In the following Cinnamon Minute Muffin recipe link, just use 3 Tablespoons of the above mix instead of the first four items listed on the recipe.  It’s SO EASY and such a time saver!  Just as yummy too!  This flour blend can be substituted in, quite literally, thousands of recipes.  Try it!
