It’s hard to find a super easy, keto friendly bread recipe that’s just made for one or two.   Low carb baking doesn’t have to be difficult!  It seems like most of the recipes I find for my way of eating tend to be for entire families.  Sometimes the recipes can be easily reduced, but then I have to just guess on the bake or cooking times.  Since many low carb food options are not cheap, I find it frustrating when I have a huge fail!  After a couple of years, I’ve found it easier to just come up with my own recipes for one or two people.  I’m also experimenting on what low carb foods that freeze well.  Not all of them do!

I’ve experimented with A LOT of keto/low carb bread recipes over the past four years.  A LOT!  The following is the easiest and best tasting so far.  It only takes a couple of minutes to mix.  The baking time is average for all breads, but it smells so good while it’s in the oven it seems like forever!  It uses my easy baking mix, so it cuts down on the prep time even more!

Preheat oven to 375 degrees and line a cookie sheet with parchment paper.

In a large bowl mix well……

2 eggs

¼ cup melted butter

3 Tbls cream

2 Tbls cider vinegar

Add…..

2/3 cup Easy Baking Blend

¼ cup Psyllium Husk Powder (this is what I use)

1 large pinch salt

Plus….

¼ to ½ cup hot water

The reason the amount isn’t exact on the hot water is because of the psyllium husk.  It depends on what brand you use.  It’s going to suck the water up at different rates.  You want to dough to be sticky and slightly firm.  You’ll be forming the bread into the shape you want it right on the pan.

I like to shape my bread like a baguette.  Do note, your bread is not going to rise or change shape.  At all.  Make it into the exact shape and size you want right from the start.  I find it easiest to spoon it out all at once and get my hands dirty shaping it.  It’s really sticky!  Once you have the shape you like, put it into your pre-heated oven for 10 minutes, then reduce the heat to 325 degrees for another 30 minutes.  If you want it really brown, you can add another 10 minutes.  Some ovens will require more or less time.

You can change up the flavor of this bread SO easily!  Here are some ideas for additions:

Chopped Rosemary

Garlic

Chopped Onion

Cheddar Cheese

Pumpkin Pie Spice

Chopped Dried Fruit (watch those carbs!)

Don’t overdo on those additions (and don't add all of them at once).  Remember this is bread for one!  A little dab will do ya!

I haven’t listed the carbs or calories for this one because I just couldn’t decide on what a serving size is for this.  Personally, I can easily finish half a loaf in one sitting!  If you haven’t already, you can download a free version of MyFitnessPal and enter the recipe to get the full nutritional value.  You’ll have to decide how many servings one loaf is for you!

This bread toasts well and freezes well.  The recipe and easily be doubled.  Enjoy!
